Week 2 of p90x lean
Had a great yoga workshop over the weekend and two wonderful nights out with friends.
I made delicious eggplant parmesan sandwhiches on Sunday. Fresh eggplant, breaded and baked, topped with sautéd spinach, roasted tomatoes, freshly made pesto, cheese, and homemade bread. Yum!

I'm looking toward to another busy week but I am also looking forward practicing mindful ways of managing stress ( meditation, walking on work breaks, breathing and reading) and also learning more about Wellness. I'm reading Quantum Wellness by Kelly Freston and it's just what I've looking for.
